02 - Generously spread softened goat cheese on the bottom half of each croissant.
03 - Arrange thin apple slices evenly over the goat cheese. Drizzle each sandwich with 1 teaspoon honey.
04 - Sprinkle chopped walnuts or pecans on top, if using. Add arugula or baby spinach for extra flavor and texture.
05 - Season with freshly ground black pepper. Cover with the top half of the croissant, press gently, and serve immediately.
